Coconut Bunny Cupcakes
From PBS KIDS and Elinor Wonders Why
These coconut bunny cupcakes are easy to put together and you can even let your little one help! They’re sprinkled with shredded coconut to mimic bunny fur and the nose and eyes are made from candy and can be eaten, too!
Decorating these coconut bunny cupcakes is almost as fun as eating them. This dessert is great when served at an Elinor Wonders Why birthday party, Easter, or any spring celebration.
Ingredients/Materials
24 vanilla cupcakes made from boxed cake mix
1 can of vanilla frosting
2 cups shredded coconut
24 pink and red lollipops
White cardstock paper
Pink marker or crayon
Scissors
Milk chocolate chips
Directions
1. Bake 24 vanilla cupcakes according to box instructions. Let cool.
2. Add vanilla frosting to each cupcake: spread a small dollop of frosting and gently spread with the back of a spoon. For a fancier dollop, you can pipe the frosting onto each cupcake using a piping bag and tip.
3. Sprinkle the shredded coconut onto each cupcake. Cover as much of the frosting as you like.
4. Draw two skinny ovals resembling bunny ears on the sheet of white cardstock. Color the inside of the paper ears with the pink marker or crayon. Cut them out.
5. Place the ears on top of the cupcake and gently push the bottom of each ear into the frosting.
6. To create the bunny nose, trim the lollipop stick by 1 inch. Place the lollipop in the center of the cupcake, pushing the stick into the cupcake so the lollipop rests right above the bottom of each ear.
7. Place two small chocolate chips under the ears and above the nose for the eyes.
