As a nod to Italian Heritage Month, and as something warm to enjoy as the weather continues to cool off, try a new, simplified recipe with the kids! When we think of soup in the U.S., we often think of chicken noodle soup, but there are many different ways to prepare noodle soup. In this activity, explore the ways noodle soup is eaten in different regions of the world. Open up a discussion about the similarities and differences of recipes which all have the common vein of being a noodle soup, all while enjoying a delicious bowl of Pasta e Fagioli.
Pasta e Fagioli
Ingredients
3 15 ounce cans cannellini beans
1/4 cup extra virgin olive oil
2 cloves garlic, chopped
2 teaspoons Italian seasoning
3 cups chicken broth
Angel hair pasta
Salt
Parmesan cheese
Directions
1. Cook pasta according to instructions on the box, then drain it.
2. In a large soup pot, heat olive oil. Add garlic and heat it through but do not let it brown. Add Italian seasoning.
3. Add the cans of cannellini beans. Do not drain the cans. Add the broth.
4. Simmer to infuse the flavors. Add the pasta into the sauce. Salt to taste. Top with parmesan cheese and enjoy!
