Mozie-Mazing Cookies

Ingredients

1 banana, smashed
1/2 cup + 2 tablespoons oats (rolled oats or quick oats)
2 tablespoons honey
1/4 cup shredded, unsweetened coconut
2 tablespoons mini chocolate chips
1/4 cup raisins

Directions

1. Preheat oven to 350 degrees F. Smash the banana in a bowl with a fork. 

2. Mix the other ingredients in with the banana.

3. Form dough into 1-inch balls. Place 2 inches apart on a lightly greased baking sheet.

4. Bake for 12 to 15 minutes or until the cookies are firm to touch or bounce back when touched.

5. Cool cookies for 5 minutes before removing from baking sheet. Let them cool for another 5 minutes on a cooling rack or a plate with a paper towel under the cookies to absorb the moisture.

6. Cookies should be served warm the day they are made and should be eaten within 2 days. Store in an airtight container at room temperature.
