Want to make your own candy at home? Chocolate truffles make for an easy place to start, with a short list of ingredients and no special equipment required. This recipe is by Katherine Duncan, owner of Katherine Anne Confections, located in Chicago’s Logan Square.
Chocolate Truffles
Ingredients
- 1 pound high-quality bittersweet chocolate, chopped in small pieces
- 1 cup heavy cream
- 2 tablespoons butter
- 1/2 teaspoon salt
- Cocoa powder, cacao nibs, powdered sugar and sea salt, or toasted coconut for topping
Directions
- Put ingredients in a glass, microwave-safe bowl. Do not mix. Microwave for 1 minute on high. Let sit for 1 minute. Stir with a silicone or plastic spatula until fully homogenous. If small chunks of chocolate remain, microwave for 12 seconds, let sit for 30 seconds, then stir again.
- Chill until firm, about 2 hours.
- Once firm, scoop the chocolate mixture using a melon baller, and roll in cocoa powder, cacao nibs, powdered sugar and sea salt, or toasted coconut for the topping.
- Keeps for 2 weeks in the fridge. Bring to room temperature to enjoy.
